Dr. Fiona O'Halloran

Dr O Halloran is a Principal Investigator in the NutRI Research group in MTU.  (nutri) and theme leader of the Food Innovation group.


Fiona O Halloran graduated with a BSc in Biomedical Science (1996) from the joint CIT/UCC programme and then completed a PhD in Biomedical Science (2000). She worked as a Postdoctoral Researcher in CIT (2000-2003) and then from 2003 to 2012 as a Scientific Research Officer with Teagasc, the Irish Agriculture and Food Development Authority. Dr O Halloran is currently a lecturer in the Department of Biological Sciences in CIT and her main teaching activities are in the areas of Biochemistry and Biomedical Science. She is a student placement co-ordinator for the Food Science and Nutrition and Health Science programmes and a member of the board of studies for the joint CIT/UCC Biomedical Science programme. As a co-ordinator of the CellEXPLORERS CIT team (www.cellexplorers.ie), Dr O Halloran helps promote science in schools and local communities through this SFI-funded scientific outreach initiative.


In this research space her main interests are in the area of food-derived bioactives and elucidating the mechanisms by which these compounds can impact human and animal health. In collaboration with Food Industry partners and other third level colleges she is involved in projects that are focused on developing novel, healthy food products for target populations. Dr O Halloran is also involved in projects that are focused on investigating antimicrobial resistance in clinical and food pathogens and has an interest in the development of alternative antimicrobial strategies to combat antibiotic resistance.
